🧂 Ingredients
Salad:
- 3–4 fresh corn on the cob
- ¼ cup pepitas
- 200g fresh sugar snap peas
- 100g baby spinach
- ¼ tsp Maldon sea salt flakes (or similar)
- 1 tbsp extra virgin olive oil
Dressing:
- 2 tbsp extra virgin olive oil
- 1 tbsp white wine vinegar
- 2 garlic cloves, finely chopped
- ¼ tsp Maldon sea salt flakes
👩🍳 Method
- Steam the corn in a double boiler until just cooked — tender but not too soft.
- Toast pepitas in a dry frypan over medium heat, stirring continuously until golden. Remove and place in a large salad bowl.
- Sauté the corn in the same pan with 1 tbsp olive oil and sea salt. Cook until lightly golden and slightly popping. Add to the salad bowl.
- Prepare sugar snap peas: remove stalks and inner strips, then roughly chop into 1 cm pieces. Add to the bowl with corn and pepitas.
- Add baby spinach and toss gently to combine.
- Mix the dressing: whisk all dressing ingredients in a small bowl, then drizzle over the salad. Toss lightly and serve fresh.
