A fantastic high-protein, high-fibre snack β perfect for healthy munching!
π§ Ingredients
- π₯£ 1Β½ β 2 cups dried chickpeas
- π₯ 1 tbsp extra virgin olive oil
- π Juice of Β½ lemon
- π§ Sea salt
- πΆοΈ Paprika, curry powder, or other spices (to sprinkle)
π©βπ³ Method
- π§ Place chickpeas in a bowl and cover with cold water. Soak overnight.
- π₯ Preheat oven to 180Β°C and line a baking tray with unbleached baking paper.
- π₯ Spread chickpeas on the tray and pat dry with a paper towel.
- β Drizzle with olive oil, lemon juice, sprinkle with sea salt and desired spices. Toss to coat evenly.
- π² Roast for 20β30 minutes until golden brown. (Air fryer works well too!)
- βοΈ Cool completely and store in an airtight container. Best eaten within 2 days.
