Zesty, protein-packed balls perfect for a quick snack or pre/post-workout bite.
π§ Ingredients
- 2 tbsp unrefined coconut oil
- 1 1/3 cups almond meal
- 1/3 cup vanilla protein powder (or lemon-flavored if available)
- 3 tbsp pure maple syrup
- 4 tbsp pure lemon juice
- Zest of 1/2 to 1 lemon
- 1β2 tsp poppy seeds
Optional:
- π₯₯ Shredded coconut for rolling
- π― 1β2 tbsp extra maple syrup if sweeter
- π° Swap protein powder for more almond meal or coconut flour
π©βπ³ Method
- π₯ Melt coconut oil in a small saucepan until liquid.
- π₯£ Add all ingredients to a high-speed food processor.
- π Taste and adjust: add more maple syrup for sweetness or more lemon juice/zest for tang. Blend again if needed.
- π‘ Scoop teaspoon-sized portions and shape into balls.
- π₯₯ Roll in shredded coconut if using.
- βοΈ Refrigerate for at least 4 hours or ideally overnight to firm up.
