Salted Popcorn Salad

Crisp, nutty, and full of texture — this Salted Popcorn Salad is a quick, refreshing dish with a light crunch and a burst of natural flavor. Perfect for lunch, picnics, or a healthy side.


🧂 Ingredients

Salad:

  • 3–4 fresh corn on the cob
  • ¼ cup pepitas
  • 200g fresh sugar snap peas
  • 100g baby spinach
  • ¼ tsp Maldon sea salt flakes (or similar)
  • 1 tbsp extra virgin olive oil

Dressing:

  • 2 tbsp extra virgin olive oil
  • 1 tbsp white wine vinegar
  • 2 garlic cloves, finely chopped
  • ¼ tsp Maldon sea salt flakes

👩‍🍳 Method

  1. Steam the corn in a double boiler until just cooked — tender but not too soft.
  2. Toast pepitas in a dry frypan over medium heat, stirring continuously until golden. Remove and place in a large salad bowl.
  3. Sauté the corn in the same pan with 1 tbsp olive oil and sea salt. Cook until lightly golden and slightly popping. Add to the salad bowl.
  4. Prepare sugar snap peas: remove stalks and inner strips, then roughly chop into 1 cm pieces. Add to the bowl with corn and pepitas.
  5. Add baby spinach and toss gently to combine.
  6. Mix the dressing: whisk all dressing ingredients in a small bowl, then drizzle over the salad. Toss lightly and serve fresh.
