π§ Ingredients
- π 150g naturally sundried apricots (check packet to ensure no additives or oils; can use other dried fruit if desired)
- π₯₯ 200g shredded or desiccated coconut
- π¬ 6 Medjool dates, pips removed
π©βπ³ Method
- β‘ Place all ingredients into a high-speed food processor.
- π Blend on high for 1 minute.
- π Scrape down the sides and blend for another minute. Check consistency β it should be slightly oily from the coconut.
- π© Press mixture into a shallow square tin lined with unbleached baking paper. Refrigerate for 4 hours.
- βοΈ Remove from fridge, lift from tin, and cut into bite-sized squares.
