🌟 Description

Zesty, protein-packed balls perfect for a quick snack or pre/post-workout bite.


🧂 Ingredients

  • 2 tbsp unrefined coconut oil
  • 1 1/3 cups almond meal
  • 1/3 cup vanilla protein powder (or lemon-flavored if available)
  • 3 tbsp pure maple syrup
  • 4 tbsp pure lemon juice
  • Zest of 1/2 to 1 lemon
  • 1–2 tsp poppy seeds

Optional:

  • 🥥 Shredded coconut for rolling
  • 🍯 1–2 tbsp extra maple syrup if sweeter
  • 🌰 Swap protein powder for more almond meal or coconut flour

👩‍🍳 Method

  1. 🔥 Melt coconut oil in a small saucepan until liquid.
  2. 🥣 Add all ingredients to a high-speed food processor.
  3. 🍋 Taste and adjust: add more maple syrup for sweetness or more lemon juice/zest for tang. Blend again if needed.
  4. 🟡 Scoop teaspoon-sized portions and shape into balls.
  5. 🥥 Roll in shredded coconut if using.
  6. ❄️ Refrigerate for at least 4 hours or ideally overnight to firm up.
