  • 🌾 2 cups organic rolled oats

  • 🍯 1–2 tbsp organic honey
  • πŸ₯œ 2 cups mixed nuts:
    • Macadamias
    • Walnuts
    • Pecans
    • Hazelnuts
    • Almonds
    • Peanuts (use what’s available)
  • 🌱 Β½ cup mixed seeds:
    • Pepitas
    • Sunflower seeds
    • Chia seeds
    • Poppy seeds
    • Sesame seeds

  1. πŸ”₯ Preheat oven to 180–200Β°C. Line a baking tray with unbleached baking paper. Use 2 trays if needed.
  2. πŸ₯£ Add oats to a large mixing bowl.
  3. πŸ”ͺ Roughly chop all nuts and seeds and add to the oats. Chunky pieces are fine!
  4. πŸ₯„ Melt coconut oil in a small saucepan, then stir in honey until partially combined.
  5. βž• Pour oil-honey mixture into the oat mixture and stir until evenly coated.
  6. πŸ‹οΈ Spread mixture evenly on the baking tray. Larger clumps are okay for chunkier granola.
  7. ⏱ Bake for 20 minutes, then turn mixture over with a spatula or egg lifter for even baking.
  8. πŸ” Check after another 20 minutes; bake further 10–20 minutes if needed until golden brown.
  9. ❄️ Remove from oven, cool completely, then store in an airtight glass jar.
