🌟 Description

The perfect light and fluffy dreamy chocolate mousse, naturally sweetened and dairy-free.


🧂 Ingredients

  • 2 tsp powdered gelatin
  • 1/2 cup boiling water
  • 2 tbsp raw cacao powder
  • 60g honey
  • 4 eggs, room temperature
  • 1/2 tsp lemon juice
  • A punnet of berries of your choice

Optional extras:

  • 4 tbsp coconut yoghurt (for serving)

👩‍🍳 Method

  1. 🥣 Place gelatin in a small bowl and add boiling water. Whisk until dissolved.
  2. 🍫 Add raw cacao powder to the gelatin mix and whisk until fully combined. Let cool to room temperature (or speed up in freezer/fridge).
  3. 🥚 Separate the eggs. Place whites and lemon juice in a large mixing bowl and beat until stiff peaks form.
  4. 🍯 Slowly drizzle in honey while continuing to beat. Add yolks one at a time and mix until combined.
  5. 🔄 Stream the cooled cacao-gelatin mixture into the egg mixture and fold gently until fully combined.
  6. 🏺 Pour into 6 small ramekins or one large bowl. Refrigerate for 4 hours to set.
  7. 🍓 Serve with berries and optional coconut yoghurt on the side.
