🌟 Roasted Chickpeas
A fantastic high-protein, high-fibre snack — perfect for healthy munching!
🧂 Ingredients
- 🥣 1½ – 2 cups dried chickpeas
- 🥄 1 tbsp extra virgin olive oil
- 🍋 Juice of ½ lemon
- 🧂 Sea salt
- 🌶️ Paprika, curry powder, or other spices (to sprinkle)
👩🍳 Method
- 💧 Place chickpeas in a bowl and cover with cold water. Soak overnight.
- 🔥 Preheat oven to 180°C and line a baking tray with unbleached baking paper.
- 🥄 Spread chickpeas on the tray and pat dry with a paper towel.
- ➕ Drizzle with olive oil, lemon juice, sprinkle with sea salt and desired spices. Toss to coat evenly.
- 🍲 Roast for 20–30 minutes until golden brown. (Air fryer works well too!)
- ❄️ Cool completely and store in an airtight container. Best eaten within 2 days.
