🧂 Ingredients
- 🌞 150g naturally sundried apricots (check packet to ensure no additives or oils; can use other dried fruit if desired)
- 🥥 200g shredded or desiccated coconut
- 🍬 6 Medjool dates, pips removed
👩🍳 Method
- ⚡ Place all ingredients into a high-speed food processor.
- 🌀 Blend on high for 1 minute.
- 🔄 Scrape down the sides and blend for another minute. Check consistency — it should be slightly oily from the coconut.
- 🟩 Press mixture into a shallow square tin lined with unbleached baking paper. Refrigerate for 4 hours.
- ✂️ Remove from fridge, lift from tin, and cut into bite-sized squares.
