  • ½ bunch fresh parsley (stems can stay on)
  • ½ bunch fresh oregano (leaves removed from stems)
  • 1–2 fresh red chillies (seeds in or out, to taste)
  • 4 fresh garlic cloves
  • 3 tbsp red wine vinegar
  • ½ cup extra virgin cold pressed olive oil

  1. 🔪 Roughly chop parsley and oregano (leave a rustic texture if preferred).
  2. 🧄 Peel and finely chop garlic cloves.
  3. 🌶 Finely chop fresh chillies (adjust seeds for heat).
  4. 🥣 Add all ingredients to a small bowl.
  5. 🍶 Pour in red wine vinegar and olive oil, then mix until combined.
  6. ✅ Serve immediately or with any dish of your choice.
