A delicious and healthy swap for mashed potatoes — even perfect for those who don’t like chickpeas!
Chickpeas are a great complex carbohydrate, packed with fibre, protein, calcium, magnesium, folate, and B vitamins, without causing a blood sugar spike like white potatoes.
🧂 Ingredients
- 400g can organic chickpeas, drained and rinsed thoroughly
OR - 400g dried chickpeas, soaked overnight
Plus:
- 1 clove fresh garlic
- 3 tbsp extra virgin olive oil
- Juice of ½ lemon
- 2 tbsp organic natural yoghurt
Optional Add-Ins:
- Fresh herbs or spices of your choice
- Avocado (for a creamier texture)
- Dukkah (for extra crunch and flavour)
👩🍳 Method
- If using dried chickpeas, boil them in water until soft.
- Add all ingredients to a food processor or blender.
- Blend until a smooth, creamy paste forms.
- Serve immediately — simple, quick, and nourishing!
