Rice Paper Banana Cinnamon Rolls

🧂 Ingredients

  • 8 rice paper sheets
  • 4 bananas
  • 1½ tsp ground cinnamon
  • 2 eggs
  • Optional: vanilla yoghurt or coconut yoghurt, for serving

👩‍🍳 Method

  1. 🥚 Crack the eggs into a wide bowl and whisk well. Set aside.
  2. 🍌 Cut each banana in half lengthways.
  3. 💧 Dip the rice paper sheets into the egg mixture, then lay them on a clean work surface or chopping board, overlapping each sheet by approximately 5cm. Work quickly to prevent the rice paper from drying out and sticking to the surface.
  4. 🍌 Place 2 banana halves lengthways across the rice paper, approximately one-third of the way in from the edge closest to you.
  5. ✨ Sprinkle the bananas generously with ground cinnamon.
  6. 🌯 Carefully roll the rice paper around the bananas to create a long banana roll.
  7. 🌀 Gently twirl the banana roll into a scroll shape.
  8. 🔥 Place the scrolls on unbleached baking paper in the air fryer. Cook at approximately 180°C for 15 minutes, or until golden.
  9. ⏲️ Remove from the air fryer once golden and allow to cool slightly.
  10. 🥥 Serve with vanilla yoghurt or coconut yoghurt spooned over the top, and enjoy!

💡 Tip: Work quickly once the rice paper has been dipped in the egg mixture, as it will soften and become sticky. For a dairy-free option, serve with coconut yoghurt.
