CARROT CAKE BLISS BALLS

Time: 10 minutes + 30 min wait time

A great idea for lunch boxes that are quick and simple to make and only contain natural ingredients!

Note: you can also replace the carrot with grated apple and it is equally as delicious.
Ingredients
50g organic rolled oats
50g pecans
3 tsp chia seeds
12 medjool dates
70g fresh carrots (skins left on), grated (see note above)
1 tsp ground ginger
1-2 tsp cinnamon
1 vanilla bean pod, scraped
25g desiccated coconut

Method

Cover medjool dates in a bowl of hot or boiling water and let sit for 10 mins to soften

Blend on high speed for 1 minute.

Put all other ingredients except the coconut into a food processor and blend on high speed until combined.

Put mixture into fridge for 30 minutes

Place coconut into a small bowl.

Roll the mixture into 12-25 balls, depending on how big you like your bliss balls, and roll in coconut to coat.

Place in fridge for 30 minutes and serve cold.
