BLACK BEAN CHOCOLATE BROWNIES

🌟 Description

Nutritious, naturally sweetened chocolate brownies made with black beans for extra protein and fibre. You can use canned beans for convenience, but cooking dried beans retains more nutrients.


🧂 Ingredients

  • 150g fresh medjool dates, pitted
  • 400g dried black beans (or canned, drained and rinsed)
  • 80ml extra virgin olive oil
  • 50g raw cacao powder
  • 40g raw honey or pure maple syrup
  • 40g almond meal
  • 1 tsp baking powder
  • 1 egg

Optional:

  • A handful of hazelnuts

👩‍🍳 Method

  1. 🔥 Preheat oven to 160°C and line a 20cm cake tin with parchment paper.
  2. 💧 If using dried beans, soak overnight, then boil until tender and cool for 20 minutes. If using canned beans, drain and rinse thoroughly.
  3. 🥣 Soak the dates in boiling water for 10 minutes to soften, then drain.
  4. 🍴 Add all ingredients, except hazelnuts, to a food processor and blend until smooth.
  5. 🌰 Stir in hazelnuts if using.
  6. 🏺 Pour mixture into prepared cake tin and bake 20–25 minutes, or until a skewer comes out clean.
  7. 🍓 Serve with berries and optional coconut yoghurt.
