🌟 Description

A quick, simple, and natural lunchbox treat packed with flavor and goodness!


🧂 Ingredients

  • 🌾 100g rolled oats
  • 🍬 200g Medjool dates
  • 🍯 2 tsp maple syrup
  • 🧂 ½ tsp sea salt (adjust to taste)
  • 🥥 35g desiccated coconut (can toast for a stronger coconut flavor)

Optional:

  • 🌱 2 tsp mesquite powder
  • 🌰 2 tbsp toasted cashews
  • 🌱 Chia seeds

👩‍🍳 Method

  1. 🌀 Add all ingredients except coconut to a high-speed blender.
  2. ⚡ Blend on high for ~1 minute or until smooth and well combined.
  3. ✋ Scoop heaped teaspoon-sized amounts and roll into balls.
  4. 🥥 Roll each ball lightly through desiccated coconut to coat.
  5. ❄️ Place in a container and refrigerate to firm up before serving.
