CARROT CAKE BLISS BALLS

🌟 Description

A quick, simple, and natural lunchbox treat!
Tip: You can replace the carrot with grated apple for an equally delicious version.


🧂 Ingredients

  • 🌾 50g organic rolled oats
  • 🌰 50g pecans
  • 🌱 3 tsp chia seeds
  • 🍬 12 Medjool dates
  • 🥕 70g fresh carrots, grated (skins left on; see note above)
  • 🌿 1 tsp ground ginger
  • 🌿 1–2 tsp cinnamon
  • 🌱 1 vanilla bean pod, scraped
  • 🥥 25g desiccated coconut

👩‍🍳 Method

  1. 💧 Soak Medjool dates in hot or boiling water for 10 minutes to soften.
  2. 🌀 Blend dates on high speed for 1 minute.
  3. ➕ Add all other ingredients except coconut to the food processor and blend until combined.
  4. ❄️ Chill the mixture in the fridge for 30 minutes.
  5. 🥥 Place desiccated coconut in a small bowl.
  6. ✋ Roll mixture into 12–25 balls (depending on preferred size) and coat with coconut.
  7. ❄️ Chill in the fridge for 30 minutes before serving cold.
